Bicholim's food legacy isn't really about food technique, it is about historical continuity. The very reason cooks cook the way they do is because the Portuguese couldn't reach far enough to interrupt the tradition. The masala survived because the community survived. It is worth mentioning that the cook is almost invisible, it is the ingredients that speak. The dining plan: Dine with us at a village khopp (it takes about 30-50 minutes from north Goa), and let the season do the talking. No menu, just what's fresh, fermented, served at a private table.
